The Music

    This week's music is based on a playlist I put together a few years ago to create a completely Latin theme for when I was cooking Latin dishes. Sipping a glass of wine on our deck. Or dancing at the end of a long day. It always gets my mood up
    I started with a favourite of mine, Alex Cuba, and built around him as a central theme by adding other Latin artists from my collection, and then downloaded some recent tunes that were high on the Latin pop or dance charts. I hope you enjoy it

    The Recipe: 

    Stuffed Eggplant Pajara

    This is a recipe I created by reconstructing a marvellous item we had at the Casa Isaitas in Pajara, Fuertaventura (one of the Canary Islands). It was done as a lunchtime tapas but I have evolved it over time to become a main course for dinner. It has a mild delicate flavour featuring the roasted eggplant. I usually make it with ground venison but any ground meat will work. Serve with a chilled white wine if you like. Difficult to get but we love it with a Malvasia, which the Canarians have been making for hundreds of years in unusual volcanic vineyards.
    Works equally well as a stuffed zucchini. When I do it like that I add finely chopped eggplant for flavour and as a thickening agent

    The Ingredients

      2 medium eggplants
      1 Yellow or orange pepper
      Stalk of celery
      1 or 2 garlic cloves
      1 lb of ground venison (I buy mine from Duncan Butcher Shop)
      Large handful of brown mushrooms
      2 or 3 small tomatoes
      1/2 cup or so of white wine
      2 to 3 cups of chicken stock (homemade preferable)
      Fresh Herbs - sage, oregano, green onions (or whatever you have on hand)
      Dried marjoram
      1/4 cup of tomato sauce
      a little tomato paste or cream to thicken if desired

    The Instructions

    • Step 1 - Roast the eggplant

        Halve both Eggplants, and season with olive oil and salt
        Roast in a 400 degree oven for 35 minutes
    • Step 2 - Fry the main ingredients

        Chop peppers, celery, garlic, onion
        Fry in olive oil/ grapeseed oil (about 2 Tbsps)
        Add 1 lb venison (or turkey) and brown
        Add chopped mushrooms and tomatoes and stir into mixture
        Sprinkle with salt , pepper, and about 2 tsps of marjoram
        Sprinkle with chickpea flour
        Cook til flour browns
    • Step 3 - Make the Sauce

        After flour is cooked add about 1.2 to 3/4 cup of white wine
        Chop fresh herbs, green onion, oregano, sage (or whatever you have)
        Add quarter cup tom sauce , mix well, and simmer for awhile
        To thicken, 2 tsp tom paste and 2 tbsp cream (any kind)
    • Step 4 - Finish off by melting cheese on top

        Remove eggplants from oven, scoop some out and add to meat mixture
        Stir and combine well
        Pour mixture over the eggplants, add some grated pepper and grated Parmesan (or mozzarella)
        Heat through for 10 minutes or so in the same oven until the cheese is melted
        Serve with sauteed spinach or swiss chard
